Peach Stuffing

SCS PEACH STUFFING

 

2  sticks of butter

10 cups or approx. 1 loaf of sandwich style bread (about 20 slices) cubed

1 cup diced carrots

1 cup diced celery

1 cup diced onions

1 teaspoon poultry seasoning

1/3 cup SCS Peach Rub

Salt and pepper to taste….if you use salted butter you will need to add less here.

 

Directions

  • Melt butter in 4-quart Dutch oven or large frying pan over medium-high heat. Cook carrots, celery, onion and poultry seasoning in butter 6 to 8 minutes, stirring occasionally, until tender. Remove from the heat.
  • Add the Peach rub to the cooked veggie/butter mixture stirring to combine, then gently add remaining ingredients, using spoon, until bread cubes are evenly coated. Add salt and pepper to taste and stir gently again.
  • Bake stuffing in a 3-quart casserole or rectangular baking dish, 13x9x2 inches (no need to grease the pan with the butter in the recipe) . Place stuffing in casserole or baking dish, cover with lid or aluminum foil and bake at 325°F for 30 minutes; uncover, sprinkle a little bit more SCS Peach Rub on top and bake 15 minutes longer.

Yankee Orange Mac and Gouda

This is one of our all time favorite recipes…give this a try and you’ll never eat mac and cheese the same way ever again.
1 1/2 lbs. Shell Macaroni
8 tlbs butter
8 tlbs flour
5 cups milk
24 oz. Shredded Gouda
2 oz Yankee Orange Rub

Crust
1 cup Panko
2-3 oz melted butter
2 oz Yankee Orange Rub
1/2 cup shredded cheese of your liking

Boil to cook and drain macaroni. In a pan melt butter and add flour… Make your roux, constantly stirring. Add milk while constantly stirring until thick add Gouda and Yankee Orange Rub. Then mix in Macaroni.
Put mixture into a baking pan. In a bowl mix panko, cheese and 2 tlbs of Yankee Orange Rub. When mixed sprinkle over Mac and Gouda… Melt 2-3 tlbs and pour over top of everything.
Turn oven to 350… Cook Yankee Orange Mac and Gouda for 20-25 mins or until top gets nice and crunchy

Salad Shaker

Take any Salad and liven it up with any of our Yankee Fruit Rubs. The fresh sweet taste will make any salad come to life with flavor. Use a Balsamic Vinegar based dressing as to a cream style dressing which might drown out the fruit taste.

Yankee Cherry on a chopped salad. Yankee Apple on a Chef Salad…the possibilities are endless
