Bacon Wrapped Scallops

Quick -easy- delicious

Scallops

Bacon

Yankee Rub

Take scallops and wrap with bacon and use a tooth pick to hold them together.

Apply a dash of Yankee Rub (chef’s choice Yankee Orange) over the top.

Cook on baking sheet, 350′ for 10 mins or until scallops are cooked through

 

 

Pan Seared Tilapia

This is an easy way to prepare Tilapia and it’s so good.

Apply med heat to a non stick pan

Spray with Coconut cooking oil to the bottom (Yes…this is delicious)

Coat tilapia fillets with Yankee Savory

Pan sear for a couple of minutes per side until cooked through

Oh…is this good!

Grilled Lobster Tail

When it comes to the special times where you want to cook something nice for your honey, here is a nice recipe with everyone’s favorite, Lobster.

Set up your grill for and indirect grill ~ 250-300′

Clean your grate and apply cooking spray over the grate

rinse tails under water

Using Sharp kitchen scissors,Cut tails to expose the lobster meat, right down the center long ways (be careful)

Clean out tail, and rinse with cold water, pat dry

rub a little olive oil over the meat

Sprinkle you Favorite Yankee Rub (chef’s recommendation Yankee Peach)

Place tail on the part of your grill where there are no coals and cover

occasionally  check on the tails but when there is no more pink and the tails seem to be curling your done. Use a sharp knife to look into the meat so make sure you are cooked through

OH….this is real good!

Grilled Salmon on Cedar Plank

For all of you Salmon lovers here is an easy way to grill Salmon on the Grill. But 1st lets pick our planks.:

Cedar wood: bold

Alder: Mild , mellow flavor

Cherry: rich, bright (chef’s recommendation)

Hickory: strong and Smokey

Maple: mild and sweet

These planks can be purchased at most cook wear stores, hardware stores or grilling stores.

OK…start your coals(NO LIGHTER FLUID) for a med. heat. Use about 1/2 the coals you generally use. I have Tel Tru Thermometers on my grills , so I’ll set my direct  grill (separating the coals on the bottom evenly) to about 250-275. In the mean time you should be soaking your plank in clean water for about 1/2 hour.

Cut your Salmon into steak sizes…just rub a little olive oil on the steaks and apply Yankee Cherry (chef’s recommendation) to the steaks, making sure the cherry pieces coat the fish.

Apply plank on Hot grate for about 5-10 mins so the plank gets hot. Place your steaks on the hot planks, cover the grill and grill/smoke for about 15-20 mins until the salmon is cooked.

Wait until you see the cherry glaze of this beautiful fish!

Sweet Yankee Jambalaya

This Jambalaya is so good , this will be gone before you know it. We recommend Yankee Cherry Rub with this recipe, but you can use any that you’d like! You can also add any kind of heat, like ground chili peppers, or maybe Andouille sausage….LIVE A LITTLE!

This recipe is worth the work!
3 tlbs flour
2 tlbs olive oil
12 oz apple sausage
2 tlbs olive oil
3/4 cup green bell pepper
1 tlbs minced garlic
3/4 cup sweet onion
2 bay leaves
1 1/2 cup long grain rice
1 1/2 dried thyme
1/2 tsp salt
3/4 tsp chili powder
1/2 tsp white pepper
1/2 red pepper flakes
1/3 cup white wine
3/4 cup crushed tomatoes
2 cups chicken broth
2 oz Yankee Cherry rub
3/4 cup shrimp or more LOL


In a large pan heat olive oil. Cut sausage into pieces and dredge in flour. Brown sausage for a few mins and set in another bowl. Add oil in same pan…. Add onions, peppers and garlic and cook until tender. Add rice and cook until it’s gets a little softer… Add the rest of the ingredients and bring to boil and simmer or transfer to a slow cooker ( recommended)
Serve when rice is cooked… Add chicken broth if you want it thinner…
Enjoy… This is so good… Oh don’t forget to remove the bay leaves LOL
