Pan Seared Tilapia

This is an easy way to prepare Tilapia and it’s so good.

Apply med heat to a non stick pan

Spray with Coconut cooking oil to the bottom (Yes…this is delicious)

Coat tilapia fillets with Yankee Savory

Pan sear for a couple of minutes per side until cooked through

Oh…is this good!

Grilled Lobster Tail

When it comes to the special times where you want to cook something nice for your honey, here is a nice recipe with everyone’s favorite, Lobster.

Set up your grill for and indirect grill ~ 250-300′

Clean your grate and apply cooking spray over the grate

rinse tails under water

Using Sharp kitchen scissors,Cut tails to expose the lobster meat, right down the center long ways (be careful)

Clean out tail, and rinse with cold water, pat dry

rub a little olive oil over the meat

Sprinkle you Favorite Yankee Rub (chef’s recommendation Yankee Peach)

Place tail on the part of your grill where there are no coals and cover

occasionally  check on the tails but when there is no more pink and the tails seem to be curling your done. Use a sharp knife to look into the meat so make sure you are cooked through

OH….this is real good!

Baked Chicken

In a hurry and need something quick and easy, well look no further. This recipe is so easy and your family will love it.

Chicken breast, thighs, wings , what ever you have on hand

Yankee Rub (they all work wonderful)

Bread crumbs or Panko (optional)

pre heat oven to 350

On a cookie sheet sprat the bottom or line the bottom with aluminum foil. Put down your chicken in even spaces. Apply rub to chicken(don’t forget to put the fallen fruit pieces back on the chicken)

Add some bread crumbs or panko on top to add a little crunch

Cook chicken for 25 mins or when the internal temp reaches 165′.

If your using Yankee Orange, or Yankee Cherry, or Yankee Blueberry or Yankee Peach…look at that wonderful glaze it makes.

Enjoy what’s different for dinner.

 

Beer Can Chicken

Easy and fun way to Grill or smoke a full roaster Chicken

1 can of beer (darker the better)

1 beer can chicken holder

olive oil

1 apple

1 small onion

1 small orange

Yankee Savory (chefs Recommendation)

1 5-6 lb full roaster chicken

Beer can chicken holders can be bought at your hard wear store, grilling store or similar. Start your grill for an indirect smoke and shoot for 250′. You may want to add some cherry wood chucks or apple for more flavor, so have them soaking in water for about 30 mins.

Spray beer can chicken holder with cooking oil. Take the beer and DRINK 1/2 of it(nothing goes to waste) take the tab off and poke holes around the top with a screw driver or similar to add more holes to the beer can top. Place beer can in holder. Place chicken, butt over the can, cut up into pieces the apple and oranges and onion and put into cavity of the chicken.

Rub a little olive oil on the entire chicken and sprinkle Yankee Rub all over the chicken.

Place entire chicken and holder and all over the section of your grill where there is no coals. You can also place an aluminum pan full of water in that spot if you choose too. This will create steam and help you cook. Don’t worry the coals won’t effect the pan…just use a disposable one anyways. Don’t forget to add your wood chunks, if you choose for an additional smoke flavor.

You’ll keep your temp at 250 and spritz the bird every 1/2 hour with apple juice to keep the skin moist and tender(The best part)

In about 3-4 hours or when the internal temp of the bird reaches 165′ you are done….let rest for about 5 mins. and ENJOY the best chicken you’ll ever have.

Don’t eat the fruit…they were just for aromatics and help the bird cook from the inside along with the beer!

 

Grilled Salmon on Cedar Plank

For all of you Salmon lovers here is an easy way to grill Salmon on the Grill. But 1st lets pick our planks.:

Cedar wood: bold

Alder: Mild , mellow flavor

Cherry: rich, bright (chef’s recommendation)

Hickory: strong and Smokey

Maple: mild and sweet

These planks can be purchased at most cook wear stores, hardware stores or grilling stores.

OK…start your coals(NO LIGHTER FLUID) for a med. heat. Use about 1/2 the coals you generally use. I have Tel Tru Thermometers on my grills , so I’ll set my direct  grill (separating the coals on the bottom evenly) to about 250-275. In the mean time you should be soaking your plank in clean water for about 1/2 hour.

Cut your Salmon into steak sizes…just rub a little olive oil on the steaks and apply Yankee Cherry (chef’s recommendation) to the steaks, making sure the cherry pieces coat the fish.

Apply plank on Hot grate for about 5-10 mins so the plank gets hot. Place your steaks on the hot planks, cover the grill and grill/smoke for about 15-20 mins until the salmon is cooked.

Wait until you see the cherry glaze of this beautiful fish!

Pork Tenderloin

Take a nice Pork Tenderloin and rub it down with Yankee Orange. Add a little salt and pepper if desired. Put this in a slow cooker. Mix in a can of Cranberries into the slow cooker, add a pinch of cloves and nutmeg over the pork loin. Add a little honey over the top.

Cook on low for 4-5 hours on low. The orange and the cranberries rock together.

Sweet Yankee Chili

Sweet Yankee Chili
Here is a great recipe for a cold winter night’s dinner.
2 lbs 80/20 ground beef
2 cans red kidney Beans strained
2 cans light kidney beans strained
3 packages of your favorite chili mix
1 tsp baking soda
15 oz tomato sauce
15 oz petite diced tomatoes
6 tablespoons of your favorite Yankee Rub
We used Yankee Peach

Brown beef, when browned add tomatoes and baking soda and cook. After, add all ingredients to your favorite slow cooker and t slow cook for a couple of hours. You can add heat as needed but this is a sweet chili. Serve with shredded cheese and sour cream. Don’t forget about the bread and a cold beer… Enjoy

Yankee Orange Mac and Gouda

This is one of our all time favorite recipes…give this a try and you’ll never eat mac and cheese the same way ever again.
1 1/2 lbs. Shell Macaroni
8 tlbs butter
8 tlbs flour
5 cups milk
24 oz. Shredded Gouda
2 oz Yankee Orange Rub

Crust
1 cup Panko
2-3 oz melted butter
2 oz Yankee Orange Rub
1/2 cup shredded cheese of your liking

Boil to cook and drain macaroni. In a pan melt butter and add flour… Make your roux, constantly stirring. Add milk while constantly stirring until thick add Gouda and Yankee Orange Rub. Then mix in Macaroni.
Put mixture into a baking pan. In a bowl mix panko, cheese and 2 tlbs of Yankee Orange Rub. When mixed sprinkle over Mac and Gouda… Melt 2-3 tlbs and pour over top of everything.
Turn oven to 350… Cook Yankee Orange Mac and Gouda for 20-25 mins or until top gets nice and crunchy

Sweet Yankee Jambalaya

This Jambalaya is so good , this will be gone before you know it. We recommend Yankee Cherry Rub with this recipe, but you can use any that you’d like! You can also add any kind of heat, like ground chili peppers, or maybe Andouille sausage….LIVE A LITTLE!

This recipe is worth the work!
3 tlbs flour
2 tlbs olive oil
12 oz apple sausage
2 tlbs olive oil
3/4 cup green bell pepper
1 tlbs minced garlic
3/4 cup sweet onion
2 bay leaves
1 1/2 cup long grain rice
1 1/2 dried thyme
1/2 tsp salt
3/4 tsp chili powder
1/2 tsp white pepper
1/2 red pepper flakes
1/3 cup white wine
3/4 cup crushed tomatoes
2 cups chicken broth
2 oz Yankee Cherry rub
3/4 cup shrimp or more LOL


In a large pan heat olive oil. Cut sausage into pieces and dredge in flour. Brown sausage for a few mins and set in another bowl. Add oil in same pan…. Add onions, peppers and garlic and cook until tender. Add rice and cook until it’s gets a little softer… Add the rest of the ingredients and bring to boil and simmer or transfer to a slow cooker ( recommended)
Serve when rice is cooked… Add chicken broth if you want it thinner…
Enjoy… This is so good… Oh don’t forget to remove the bay leaves LOL

Burgers

Doesn’t matter if you want to grill your burgers or flat top them, you can always add life to your burgers with any of our Yankee Rubs.

3 tlbs. of any of our Yankee Rubs to every 1 lb. of ground beef

So go ahead and add some Yankee Apple, or maybe you want something Savory tonight. Our Yankee Savory is our non fruit rub where we call it our “sweet Heat” or our “Cajun light” .

So give some life to those burgers with Yankee Rubs and taste the difference. So no to boring burgers
